Zucchini Cake

My daughter make this zucchini cake today and it was delicious! We are planning on shredding up a lot of our surplus zucchini tomorrow and freezing it in 2 cup baggies to use in the winter in both this cake, some muffins with walnuts and raisins. I made a simple powdered sugar, vanilla and drops of milk icing and it is perfect! As you can see by the picture below, i didn't get to it in time before my family ate a bit of it.



The recipe is from The Family Homestead by Crystal Miller

Zucchini Cake

2 cups Sucanat (i used white sugar)
3 eggs
1 cup olive oil (i used melted vegetable shortening -was out of any kind of oil)
2 cups peeled and grated zucchini
1 T vanilla
3 cups whole wheat pastry flour (i used regular white unbleached)
1 t baking soda
1 t salt
½ t baking powder
1 T cinnamon

Preheat oven to 350. Spray a 9x13 inch pan with non-stick spray. With a mixer beat eggs until foamy. Add oil and Sucanat, zucchini and vanilla. Blend well. Add flour, soda, salt, baking powder and cinnamon. Pour into pan and bake for 1 hour.

While still warm spread a powdered sugar glaze over the top.

End of Season Soccer Tournament - HOT!!!

My middle daughter had her end of season soccer tournament this weekend, we have done day 1 and are looking forward to day 2 tomorrow, bright and early. The team is red and one of the girls brought along red hairspray....bright move!! They all striped their hair and the minute the sweating started, they looked like they had major head wounds, with orangy-red blood dripping from their face, LOL.... Here middle daughter is trying to show us the remains of her hair....can't see it too well, i had wiped it all off in the car and the red in the hair isn't showing up very well. You can see my oldest in the background, tired, hot and ready to go inside :)

here is my baby boy, with his friend that my mom was babysitting for her momma....they got along great!

Though here it looks as though are they are thoroughly bored by the sixth hour at being at the soccer fields in the 90+ heat.

I am going to try to start blogging again :)

So we will see. I just loved blogging when i could, but it seems i hardly have the time. All the time i think "i should blog about this" but i don't.

So, i can't say with certainly how often i will blog, but i am gonna try to make more of an effort :)

Vision Forum

I love this website and i hope to get many more DVDs from there. It is a great christian site and my kids are wanting the Jonathan park CD's so bad. My older girls have outgrown the Adventures in Odessey (which i couldn't stand the whininess and the disobedience in them anyway!) but they loved to listen to them in the car and at night.
